Guar Gum is a non-digestible fiber derived from the guar plant, native to India and Pakistan. It has thickening powers more powerful than cornstarch and is used in dressings, sauces, milk products, and baking mixes. It is sometimes used as a binder in gluten free baking allowing the baked goods to rise without gluten.
